Joni's Bulgur Salad
Served with She's Not There


Lemon-basil vinaigrette

1 T fresh or 1 tsp dried basil
1/3 cup extra-virgin olive oil
1/3 cup fresh lemon juice
1/4 tsp garlic powder (or 1 fresh clove, crushed)
1 tsp coarse salt

Salad:

1 cup bulgur
1 cup boiling water
2 cups chopped fresh spinach (or other green)
1 cup roasted chicken (about 4 oz)
1 medium avocado
12 Kalamata olives, chopped

Whisk together first five ingredients in a small bowl to make vinaigrette.

Place bulgur in a 1 qt bowl and cover with boiling water. Let stand for 30 minutes or until the liquid is completely absorbed. Stir in the remaining ingredients. Add vinaigrette and toss gently. Serve at room temperature.
